Healthy Vegetable Recipe with Brown Rice
A Brown Rice and Vegetable Recipe
Brown rice is very high in fiber and helps keep me regular.
I love to take a cup of cooked brown rice and mix with it a good variety of finely chopped raw veggies, including but not limited to broccoli, cauliflower, zucchini, grated carrot, chopped onions, and greens like spinach or romaine.
Use your imagination! You can heat the rice, and then mix in the veggies raw. This way the dish is slightly warmer than room temperature when you eat it, and the veggies still have their "life" in them.
I use soy sauce or a good tahini dressing or even just a dash of sea salt for flavoring.
Slicing an avocado on top will add some healthy fat to this healthy meal.

Here's a recipe that uses rice and some veggies... not raw but it's so good I thought I would share anyway. :) I often eat this for breakfast!
Chop up some fresh garlic and onions, and saute it for a little while in some coconut oil. Then add the some cooked brown rice, a bit of mozzarella cheese and stir until the cheese is melted. Remove from heat and add roasted red peppers and parsley. Salt to taste. That's it! I just wing it but below I've listed the ingredients with approximate measurements:
2 teaspoons coconut oil
2 cloves garlic, coarsely chopped
1/4 to 1/2 of a small onion, diced
1 cup cooked brown rice
1/4 cup mozzarella cheese, shredded
1/2 of a roasted red pepper, chopped
2 tablespoons fresh parsley, chopped
I usually make this in a nonstick pan because the cheese can stick quite well to a regular pan and be tough to clean. Hope you enjoy this recipe should you decide to try it out. And thanks for all of the wonderful information you provide!!
