Kale for Health

It's a sorry fact of life, but most people don't even know what kale is.

It blows my mind, but just about every time I buy a bag of this mineral and vitamin-rich dark green leafy vegetable, the check-out person at the register asks, "What is this stuff?"

"It's kale," I explain, "and it's really good for you."

Most of the folks at the register respond to that comment with the same look they reserve for customers with dirty fingernails who are picking their nose.

Seriously, kale is one of the best vegetables you can eat as preventative medicine.

Did you know that kale contains more carotenoids (anticancer agents) than any other green vegetable?

Well, it does.

You will want to eat kale both raw and cooked. Some of the carotenoids are destroyed during heating, but cooking also makes more carotene available for bodily use.

Even a paltry half cup of kale a day will give you cancer-blocking benefits.

I like my kale in salads and in super green smoothies.

Others like their kale cooked. Here are two healthy kale recipes, courtesy of Shelley...
Cut one bunch of kale into bite-sized pieces. Saute 1/2 tablespoon (or as much as you like) of minced garlic in a bit of oil (I use peanut or olive). Add kale and stir fry until it turns bright green. Add one or two tablespoons of water and some powdered veggie broth. I like Vegeta brand. If you can't find Vegeta, make a small amount (1/4 cup) of veggie broth and pour over kale. Mix well. Cover the pot and steam until kale is done to your taste.
And the second cooked kale recipe...
Saute one onion and one half to one tablespoon of garlic. Add a small can of diced tomatoes with their juice. Add cajun seasoning like Zatarain's to taste. Add one bunch of diced kale and cook until done to taste. This is really good served over rice. The longer you cook the onion, the sweeter it will become and the better the tomato sauce is.
Personally, I like to have plenty of raw kale in my diet because the calcium content is so high, but I prefer it in juice rather than having to eat it.

So try juicing a big handful with celery, apple, zucchini, and a carrot. Fantastic!

Did I mention that kale is cheap?

I didn't, did I?

Well, it is.

At our local supermarket, I regularly buy a basketball-sized portion of this wonderful vegetable for 92 cents or less.

Kale may not be the tastiest veggie on earth, but it's one of the healthiest, so give it a try.

Do you just mix some raw kale in with your salad greens? We feed our reptiles kale because the guy at the pet store said it was good for them, don't know why it never occurred to me that it would be good for us, too!

Jackie, yes, sure, you can wash and then chop the kale leaves and add them right to your salad. Discard the thick stems when using in salads, though the stems juice just fine.

Go easy with your first salads garnished with kale because this membr of the cabbage family has a distinctive taste that some initially find rather bitter.

Hi Chet! I just wanted to share my kale recipe:

Wash and remove stems of a couple of bunches of kale leaves

Cut or rip the greens and place in a large bowl. I like to rip as opposed to using metal on my greens.

Add celtic sea salt, garlic powder or raw garlic, red onions, cayenne pepper, and olive oil...all to taste.

Put on your rubber gloves (if you like) and massage, squeeze and twist the greens in your hands for a few minutes...until tender and the juices of the greens start to release in the bottom of the bowl.

Enjoy!!!

I put four or raw leaves of Kale in my Vitamix along with 1 c of frozen blueberries and 2 frozen bananas and wow, what a great smoothie... also mix in 1 cup of pure water...blend on high for 45 seconds, it cuts the bitterness of kale but you feel great after you eat it...

however and I know it since in many countries from Germany to Russia, people eat huge quantities of all type of cabbages all year round and have problems with hypothyroidism,

it is mentionned in the same article :

'Kale contains goitrogens, naturally-occurring substances in certain foods that can interfere with the functioning of the thyroid gland. Individuals with already existing and untreated thyroid problems may want to avoid kale for this reason. Cooking may help to inactivate the goitrogenic compounds found in food. However, it is not clear from the research exactly what percent of goitrogenic compounds get inactivated by cooking, or exactly how much risk is involved with the consumption of kale by individuals with pre-existing and untreated thyroid problems'

It is mentionned on many sites, like this :
Goitrogenic foods like brussels sprouts, rutabaga, turnips, cauliflower, African cassava, millet, babassu (a palm-tree coconut fruit popular in Brazil and Africa) cabbage, and kale can act like the antithyroid drugs propylthiouracil and methimazole in disabling the thyroid function, so they should not be eaten in large amounts by someone on thyroid hormone replacement who still has a thyroid. It's thought that the enzymes involved in the formation of goitrogenic materials in plants can be destroyed by cooking, so thorough cooking may minimize goitrogenic potential.

Two goitrogens are quite prevalent in the American diet—peanuts and peanut butter and soybeans used most often in prepared foods as textured vegetable protein (a refined soy food) and soybean oil.

I mention it in case some readers would begin to eat kale night and day lol ! because of its benefits to health .. but this side effect can happen

i love the kale too.
i never knew about it till i heard that oprah loved it. (w/marinara sauce and garlic) if you close your eyes its alittle like pasta.

I LOVE this salad recipe from Chad Sarno's "Vital Creations" book. You won't even realize you are eating raw kale!

raw kale shredded
avacado
tomatoes
lemon juice
olive oil
cayenne pepper or red pepper flakes
celtic salt

Combine all ingredients except tomatoes
and hand massage ingredients together,
creaming the avocado to wilt the kale,
add tomatoes and serve...
Yummm...

we just rec'd one of those new fruit baskets where the fruit is shaped like flowers and kale is used as the "leaves." well, i tried some and it is so good. dosn't taste bitter at all.

I too love those dark green juicy treats. Here's my favorite:

Juice 1/4 pineapple, 4-5 leaves of kale, one lime and a handful of cilantro. Enjoy!

i'm so glad to know i can use raw kale in salad! plain old lettuce doesn't quite do it for me, and my local co-op doesn't always carry fresh spinach, which is my first choice. i never tried raw kale, though, because i wasn't sure if there was any reason it would be indigestible.

my favorite way to have kale:
steamed over a pile of rice, with a splash of bragg's liquid aminos, a squirt of lemon juice, and grated ginger on top. YUM!!!

KALE IS MY ABSOLUTE FAVORITE FOOD!!!!

i fell in love with it long before i even knew all of the health benefits!

The way I eat it? (which is almost every day for lunch) is raw.

Tear up a large amount into a bowl, discarding the stems (or save them for juicing). Then add Newmans balsamic vinaigrette, and some lime, if you'd like. now: IMPORTANT! dig in with your hands and massage the dressing into the leaves with your fingertips. this will turn the leaves a deep rich color. after it's coated, let the kale sit for 10 MINUTES. this lets the kale wilt a little bit and it becomes really tender and sweet! then, add whatever you like best on your salads! (nuts, fruit, etc.) but my absolute favorite is AVOCADO and GRAPEFRUIT on top. then, enjoy!

Kale is fantastic in Green Smoothies and a very easy way to get it into your diet. Add it to your favorite fruit smoothie and you have a powerhouse drink.

I love all kinds of Kale, from lacinato to purple! Not to mention, kale stems make wonderful cat toys! Tie one to a string and your cat will bat at it and chew it with pleasure
