The
recipe below is a hearty and warm-your-bones vegetable soup, made
in beef broth.
Ingredients
and Directions:
1 onion,
sliced
2-3 carrots, chopped
Shiitake, baby bello, and oyster mushrooms
1 bay leaf
2 cloves of garlic, crushed
1/8 cup fresh Italian parsley, minced finely
Salt and pepper to taste
Organic, high quality beef broth
Cooked rice
Combine
all ingredients except rice in crockpot. Cook on high for 1 hour,
bringing soup to boil for at least 15 minutes, and then low for
1 more hour.
